Super Seedy Crackers  

One of my clients sent me this recipe and I couldn’t wait to share it with you. Nutty, seedy, yum!!

In general, crackers are high in refined flours, high in refined oils (including highly processed palm oil), contain sugar, lots of salt and additives and preservatives and may even contain high fructose corn syrup. 

But not these crackers. This recipe is made with whole, simple ingredients to nourish your body. It contains stone-ground corn, whole seeds, nuts and unrefined oils. There is no added sugar and a minimal amount of salt or sodium.  

This recipe is RICH in healthy Omega 3 plant fats. Each serving contains about 63% of your daily recommended amount. It is a great source of fiber and an excellent source of iron.  It’s also rich in B Vitamins and Vitamin E.

Super Seedy Crackers

We love this recipe because you can make it all in one bowl.  Easy peasy!

Ingredients:

  • 1 cup stone-ground cornmeal
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup black sesame seeds
  • ¼ cup sliced almonds 
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seeds
  • 1 tablespoon hemp seeds
  • Pinch of salt – the original recipe calls for 1 tablespoon of salt.  You can certainly use this amount or add some spices like granulated garlic or granulated onion for added flavor. 
  • ¼ teaspoon ground Chipotle chili powder
  • ¼ cup unrefined extra virgin olive oil
  • 1 cup boiling hot water

Directions:

  1. Preheat oven to 350̊ F.
  2. Add parchment paper to cover one large or two medium sized baking sheets.
  3. Add all ingredients to a medium sized bowl and mix together throughly.
  4. Spread mixture on a baking sheet with a spatula.  Spread a super thin layer.
  5. Bake for 35 – 40 minutes or until crackers are crisp. Undercooking can make the crackers too soft.  
  6. Let cool and then break into pieces.
  7. Top with vegan feta cheese and marmalade or peanut butter and fig jam and then serve.

Please note: If you would prefer to have more evenly sliced crackers, cut them before they go into the oven with a knife or pizza cutter.
